About 7 years ago I decided to quit the rat race of accounting after 12 years and decided to pursue my dream of owning my very own bakery called Patty Cakes. So I applied for a job at Wal-Mart and what was then St. Louis Bread and is now called Panera Bread. I got both, so I decided to work for both places to get my feel of the industry.
Well Wal-Mart no longer did scratch baking, so that was disappointing and the job at Panera was a counter clerk, but they both got me on my way. I wasn’t yet ready to go to school so my husband and I moved to Boys Ranch Texas and I got a job in the Dining Hall as one of the ladies that helped the kids out front, then I eventually transferred to the recreation center as a grill cook. About a year later, I finally got the nerve up to apply for Culinary School. After a lengthy admittance process, I was accepted to the Art Institute of Dallas.
So we packed up and moved to Dallas in 2006. Before school started I got a part time job at Paciugo and a full time job as an overnight Baker at Panera Bread. I worked at these two companies for the first 7 months of school. With 40+ hours of work and 20+ hours of school, I had 2 full time jobs. While in school I worked for Paciugo, Panera, Whole Foods, Sprinkles and a catering company.
I wanted to get my feel of different parts of the industry so that I made sure I wanted to own my own bakery. I ended the search with the job at the Ritz Carlton Dallas and worked there for about 1 1/2 years.
I started doing catering out of my small apartment in the summer of 08, by that December my catering list grew to where I needed to find a kitchen to do more. I found this little quaint homey cottage in Grapevine Texas and officially started my catering company in January , 2009. In October, 2009 a little spot opened up on main street which was perfect for a bakery. In may, 2010 we moved to grapevine because this is where we want to settle down at and it’s perfect for us and reminds me and my husband of where we were from in Oklahoma but on a larger scale. In January, 2011 we decided to moved the bakery up a block and half to the central business district of Grapevine. The main reason for this was that the space that became available was open to where we had the option of doing whatever we wanted to it. This is our new home and we welcome you to it. We love our customers and the community that helps support us. Usually I am in the kitchen cooking or baking and my husband Kevin manages the storefront. So we hope to see you in soon.
